My favorite Indian dishes

I love to cook Indian recipes with Indian spices and also some simple healthy recipes.

Here I would like to share a number of my dishes which are my all-time favorite and also daily I used these in my meals. Sometimes I cooked some quick recipes like fries with the uses of many vegetables which take less time also very delicious. My favorite cuisine is Assamese, North Indian, Punjabi, and Bengali foods so I give all of my tried recipes here during this blog.

Chicken Patiala

Ingredients:

750 gms Chicken1/2 cup Curd
1/2 tbsp. Garlic Paste

Chicken Patiala
1/2 tbsp. Ginger Paste
1/2 tbsp. Turmeric Powder
1/2 tbsp. Red Chili Powder
1/4 tbsp. Black Pepper Powder
Salt (as per the taste)For Gravy
3 tbsp. Oil
1/2 Inch Cinnamon Stick
2 Green Cardamoms
2 Cloves
1/2 tbsp. Cumin Seeds
1 tbsp. Ginger (chopped)
1 tbsp. Garlic (chopped)
4 Onions (chopped)
1/2 tsp Turmeric Powder
1/2 tsp Red Chili Powder
1 tbsp. Coriander Powder
2 Tomatoes (chopped)
1/4 cup Water
2 Green Chilies (chopped)
For Chicken Curry Gravy
1 tbsp. Oil
1/2 tsp Cumin Seeds
1 tsp Ginger (chopped)
1 tsp Garlic (chopped)
1 cup chopped Fenugreek Leaves)
1 Onion (diced)
1 Capsicum (diced)
1/4 tsp Turmeric Powder
1/2 tsp Red Chili Powder
1/2 tsp Cumin Powder
1/2 tsp Coriander Powder
1/2 cup Cashew nut Paste
Salt as per taste
1/2 cup Water
1/2 tsp Garam masala Powder
1 Green Chili (chopped)
1/2 inch sliced Ginger
1 tsp Dried Fenugreek Leaves
1/4 cup Fresh Cream 


Method of preparation:


Step 1:Take clean 750 grams of chicken

        Add half a cup of curd

        ½ teaspoon of garlic paste,

        ½ teaspoon of ginger paste,

         ½ teaspoon of turmeric powder,

         ½ teaspoon of red chili powder.

         ¼ teaspoon of pepper powder and

         Put Some salt to taste.

        Mix this well and keep it aside

Step 2: Heat 3 tablespoons of oil in (kadhai) cooking pan

          Once the oil gets hot,

        Add some spices---

        ½ inch of cinnamon

        2 cardamoms,

       2 cloves.

       Add ½ teaspoon of Cumin seeds,

       1 teaspoon of finely chopped ginger and

       1 teaspoon finely chopped garlic, going to try to stir the raw smell of the ginger and garlic
       goes off

        Add 4 medium-sized finely chopped onions

        After onions are brown,

       Add ½ teaspoon of turmeric powder,

       1/2  teaspoon of chili powder,

       1 tablespoon of coriander powder

        Sauteed for a few seconds.

        2 medium-sized finely chopped tomatoes

        Add this to the onion cooked and this by cooking it to the tomatoes are soft.

        Add quite a couple of watering

Step 3: Remove ½ of this masala and keep it aside for the gravy.

       Now, in this remaining, Masala, add the marinated chicken.

       Add finely chopped green chilies.

       Saute the chicken for five minutes

       Cover it and cook it on a low flame though the chicken is done.
 Step 4: Now take the masala removed from the onion and tomato gravy to make up another gravy,
        which is used to finish off the chicken curry.

        Add 1 tablespoon of oil and once hot

        Add 1/2 teaspoon of cumin seeds

        1 teaspoon of finely chopped ginger,

        1 teaspoon of finely chopped garlic.

        Add 1/2 of (methi) fenugreek leaves finely chopped clean with salt and water to remove the                 bitterness

       Sauté for a while

      Add 1 medium onion

      Add 1 diced capsicum.

      Saute for a minute.

      Add ¼ teaspoon of turmeric powder.

      ½ teaspoon of chili powder,

      ½ teaspoon of Cumin powder.

     ½ teaspoon of coriander powder. Mix this well.

Step 5:Add the remaining masala that we had removed. Mix this.

       Add ½ cup of cashew nut paste

       Sauté this for three to four minutes on a low flame.

      Add ½ teaspoon of salt.

      Add ½ cup of water.

      Cook this gravy for another three minutes.

Step 6:If our chicken is cooked.

      Add the gravy that we have prepared,

      Mix this well

      Add ½ teaspoon of garam masala powder.

      1 green chili finely chopped.

      Add ½ inch of ginger thin slices

      Add 1 teaspoon of dry fenugreek leaves

      Cover the lid and cook it for another two minutes.

Step 7:Turn off the flame

     Add 1/4 a cup of fresh cream, mix this well

     Chicken Patiala is ready to be served

Garnish this with some fresh cream. Some finely chopped coriander. You can have it with rice roti or parathas…..😋..😋..😋
